Did the coffee plantation excursion which was nice. Found the talking on the pa during the long drive to be loud and not really suitable for someone that may have wanted to rest during the drive. Headsets would have been ideal if you wanted to listen or not.

Take the time to drive to Antigua. We booked an ATV tour through Simoon tours (not through the ship). It was so fun for our larger group and we could get to places a tour van could not. Great lunch at a small, local place with beautiful views.
