I have been a cruises with two other lines - I found the Enchantement of the Seas lacking when I compared similarties between the three other ships I have been on.
For what we paid it was ok - If we paid much more as others had it would be lacking.

the windjammer room was small, the buffet itself is small compared to other ships. The variety and quality of food was equal to cafteria food. The Grill resturant was excellent and worth the $20.00 extra per person. comparing breakfast and lunch in the dining room or windjammer was not much different -the food was cold or room tempture and not prepared to order ie eggs bendict cold. Same menu every day

the staff was fine have no complaints. They were friendly and nice.
Ship Quality

the other cruise lines - public rest rooms all had cloth towels - this ship had paper towels.
the other ships gave the passengers cloth shopping bags to take ashore ( one for each passenger) - this ship had one plastic bag per cabin. The other cruise lines placed a bowl of fruit in the cabin. This ship placed soda and bottled water in cabin for a charge. the ship itself was always clean, nicely decorated on a lower budget. One very nice feature was the adult only swim area.
Cabin / Stateroom

bathroom smaller thanother ships, place always kept clean and neat. beds comfortable, linens fine,. We had inside cabin - I look at the cabin as a place to change and do the three "S". I am not on board to remain in my cabin all day so it was fine.
were not there long enough to experience much - had to be back on ship early afternoon - Key West has become very touresty and lost some of its earlyer charm. ie lots of the same chain shops found all over.
