If you sail when schools are in session, there will be less kids and it will be slightly less crowded. But ships are still sailing at 100% capacity and above, when you include cabins with more than 2 guests. It will still feel crowded at times.

Ships are fully loaded with guests. But you can still find space to yourself if you look.
