I’m confused about The Galley. It seems like there are certain stations where you would get the food yourself, like salad bars and dessert items. But otherwise, you order from a server at your table. Is it obvious which is which? Also, is it tacky to order a soda at one of the upscale restaurants?

There didn't seem to be a hard and fast rule.  If you went to the counter, they would serve you and they also served you at the tables.  There is a menu for the galley you can find online, but they had other stations such as a chopped salad and a bread/dessert station.  If you just went by the menu, you will miss out.
