My wife and I went on a Royal cruise at the same time a year ago. The food was fabulous, there were lots of activities and entertainment, the service was great etc.

There were very few food selections that came with the cruise. The food offered in the Garden Cafe (buffet) was mediocre at best. There were no soft drink machines or fountain drinks except for the bar, nor was there any bottled water to be found, except in the room refrigerator, which was $6 a bottle.
Onboard Activities

The pools were very cold. There were a few singers that were good, but not much else to do. No fun stuff like putt-putt, very few games like trivia or social fun stuff.

I had to wait at the bar for 45 minutes for a drink because the bartenders were ignoring a group of us at the far end of the bar. They finally got to us. We were kicked off the cruise 2 hours early, and were woken up and given 20 minutes to vacate.
Nice place, good food. Did a snorkeling excursion, the water was freezing cold and we had to cut it short due to a storm passing by. Not the ship's fault, but still disappointing.
Not sure why, but got totally screwed out of this port. Some lame reason about docking. We spent the entire next 2 days at sea, and the ship had no backup plan for entertainment except drinking and gambling.
If you are looking for more activities on NCL you need to book on the larger resort type ships not the Gem class. Those are older smaller ships that cater to a more senior clientele. More research is needed next time as the things you complained about were discoverable ahead of time.
