Celebrity APEX is a very pretty ship. The service is excellent, the food is good, the activities plentiful and the entertainment very good. The infinite veranda is way better than I thought it would be and the cabin is quite spacious with it. With the ship being full, bring a small bit of patience as you will wait a bit. If you want a pre-dinner drink, get there early to get a seat.

The actual food was good to very good in the main dining rooms. HOWEVER, the wait to get a table was unacceptable. We eat at what is normally an off time (8:30) and yet each time we had to wait in a line (10-15 min) to get a buzzer to wait for a table (20-45 min). We tried to get reservations but, there were none and when we asked the concierge was told that they don't do reservations for parties of 2.
We enjoyed lunch at Raw on 5, which is very good (although pricey with the a la carte pricing) and Le Grand Bistro, which was also very good and a value for the fixed price.
Eden was a fantastic dinner experience from the food quality to the service.
If you upgrade to the premium package, be aware that not every venue has all the upgrades and some have barely any.

Onboard Activities

A well stocked fitness center and a walking/running track that encompasses 2 levels and is truly wide enough for 2 across. It even has a hill.
The activities are excellent. Definitely try the curling and archery. But, make sure you are there 5-10 min early to put your name on the list as they start on time and close the list for participants at that time.
Entertainment

The main stage shows that we saw were excellent. The DJs and (most) of the musicians around the ship were also excellent. We were unable to see the Eden shows as the venue is small and has limited seating. With the late dinners we were unable to get there early enough to find a space to see the show.

As usual, most of the crew seems to genuinely want to make sure they are serving you well.
Ship Quality

The cleanliness of the ship is outstanding. It has some very interesting and cool features. The downside is that there is no intimate lounge for a cocktail. The martini bar is in the Grand Plaza and it is impossible to get a seat in that area or find a server to get a drink from. Eden has a cavernous feel to it and there is not enough seating there either. We did discover that the Magic Carpet doesn't have dinner every night and when it doesn't it is empty and was a fantastic place for a pre-dinner drink.
Cabin / Stateroom

The cabin was great. I did not think I would like the infinite veranda but, I really did. We liked the extra space and it really felt like being on a balcony.
The only negative is that the closet is way too close to the bed. It was extremely difficult getting items out of it. I am an over packer and had enough room for clothes. I use an over the door storage shoe storage system that I put over the bathroom door. Otherwise it would have been tough to get the shoes out of the closet. There is an enclosed cabinet next to the bathroom that we used for overflow and could hold shoes.
Ship tip
Explore the outside in the evening. The rooftop garden is a fantastic place to hang out.
We walked around Old San Juan. Had a cocktail at La Factoria and dinner at Casita Miramar. Uber is the way to go to get outside of the Old San Juan neighborhood.
Walk right outside the port and ask for a cab/van to Cane Garden Bay (round trip is ~$24). You will be put in a small van with 9 new friends. The AC will not be turned on so the cab/van can get over the "hills" (I think they are really mountains), so sit in the 1st row. Walk about 5-10 min up the beach and slightly away from the beach. There you will find Callwood Distillery, an amazing rum distillery. 4 samples are only $1.
We did not leave the city center. We did a walking and food tour with St. Kitts Food Tours. Glen was fantastic. Very interesting history and yummy food. You will walk a lot.
