There are actually so many choices for lunch on Carnival Vista! You can have a Guy's burger or a burrito from BlueIguana Cantina on the lido deck, seafood from the Seafood Shack, or barbecue (on select days) from Guy's Pig & Anchor. Also - not everyone knows this but the specialty restaurants Cucina del Capitano (Italian) and JiJi Asian Kitchen offer free lunch. Cucina has a build your own pasta bowl, and JiJi offers their own build your own bowls, too.
