Compared to other cruises I have been to, food was just ok. Choice was pretty limited especially for vegetarians in our group. They didn’t have white rice for lunch, which is a staple for Asians and Indians. Absolutely no Indian food for lunch... at dinner, we made a special order, so we managed.

Didn't your travel professional put a a request about special menu dining at least 2 weeks prior to sailing. Carnival does offer several hidden menus like kosher, halal, severe coronary restricted, and Indian (either complete vegan, generalized vegetarian, and for those that chose to eat fish & certain meats), for foods served in the main dining rooms breakfast, brunch, and dinnet. Though there is no added cost for the hidden menu they still ask for advance notice, since most of the ethnical derived menus also have a strong ties to religious or philosophical beliefs, the cruise line likes to make a clear no cross "contaminant" prep and cook area for these meals.

Mongolian Wok has chicken, beef and assorted vegetables. All on the indian food list. Maybe it's just the curry that was missing.

There are plenty of veggies onboard and salad. I eat Keto and do perfectly fine.
