Recipe: Norwegian's Side Car Cocktail & Celebrity's Chicken Flatbread

For this week's Tasty Tuesday recipes, we're sharing a simple but delicious cocktail recipe from Norwegian Cruise Line — the Side Car. Then, take some time to make one of Celebrity Cruises' scrumptious recipes from their exclusive Luminae restaurant, located within The Retreat on Celebrity Edge.

Side Car — Norwegian Cruise Line

Ingredients:

  • .75 oz Fresh Lemon Juice
  • .75 oz Cointreau Orange Liqueur
  • 1.5 oz Brandy

Garnish:

  • Orange peel

Instructions:

  • Coat the rim of a glass with sugar and set aside.
  • Fill a separate glass with lemon juice, orange liqueur, brandy and ice, then shake well.
  • Strain into glass rimmed with sugar over fresh ice.
  • Garnish and enjoy.

 

Chicken Flatbread from Luminae — Celebrity Cruises

Chicken Ingredients:

  • 3 pieces of chicken breast
  • 1 piece of garlic clove, mashed
  • 1 sprig of thyme
  • Extra virgin olive oil
  • Salt and pepper to taste

Chicken Instructions:

  • Season breast with salt, pepper, and garlic.
  • Roast the chicken breast in a pan with thyme, garlic, and extra virgin olive oil until crispy and golden.
  • Place in oven at 320 degrees Fahrenheit until fully cooked.

Guacamole Ingredients:

  • 1 ½ avocado, peeled and mashed
  • ¼ cup water
  • 1 oz. lemon juice
  • 1 tbsp. cilantro, chopped
  • 1 tbsp. garlic, chopped
  • ⅛ tsp. garlic, chopped
  • ¼ a jalapeno
  • Salt and pepper to taste

Guacamole Instructions:

  • Combine all ingredients into a bowl and blend until it reaches a smooth puree texture.
  • Season with salt and pepper to taste.

Roasted Cherry Tomato Ingredients:

  • ½ lb. cherry tomatoes
  • 1 sprig of thyme
  • ½ tbsp. garlic cloves, finely chopped
  • 1 oz. extra virgin olive oil
  • Salt and fresh ground black peppercorn to taste

Roasted Cherry Tomato Instructions:

  • Cut the tomatoes in half and toss with thyme, garlic, and olive oil.
  • Season with salt and ground black peppercorn to taste.
  • Lay tomatoes on a sheet pan with the inside cut facing up.
  • Bake in the oven at 200 degrees Fahrenheit for two hours. Tomatoes should be slightly shriveled with a little bite (all liquid should evaporate). 

The Final Product - Chicken Flatbread Ingredients:

  • 1 flatbread
  • 1 grilled chicken breast, thinly sliced with no skin
  • 1 oz guacamole
  • 4 avocado slices
  • ¼ oz baby arugula 
  • 1 tbsp. garlic chips
  • ¼ tsp. chili flakes
  • 4 parmesan shaves
  • 6 roasted cherry tomatoes, cut in half
  • Micro greens for garnish
  • 2 tbsp. extra virgin olive oil

Chicken Flatbread Instructions:

  • Bake the flatbread until golden and crispy.
  • Spread guacamole on top.
  • Top with arugula. Add chicken breast and avocado slices.
  • Garnish with cherry tomatoes, garlic chips, shaved parmesan cheese, and chili flakes.
  • Drizzle with olive oil.
