We took a ship sponsored excursion to the Lamania Ruins/New River. It was great - but strenuous (if you climb). We were the first tender off and the last tender back - so book this one through the ship if you go.

We did an independent excursion to the Discover Mexico Park - Chocolate and Tequila tasting. It was very nice.

Very relaxing and low key. We just hung out on the beach/pool.
