Yes but you do that through your app on your phone. We did a few people get in without reservations.

Strictly speaking: no, they're not required. It says "we always reserve a few tables for walk-ins" somewhere on the app. But some speciality restaurants are very popular and I would highly recommend you do ask for a reservation in those as you otherwise risk getting unlucky.

When we cruised in July of 2022 they suggested making reservations but you were able to get seated at most of the restaurants. I’m not sure how it is going to be now that the ship is at full capacity. I’ll find out in a little more than two weeks! Love this line, hope the experience is mostly consistent from our last.
