You can call Carnival and they will help you or you can log in to Carnival online and add what speciality restaurants you want to book and put them in your cart and checkout (pay for them). Just putting a reservation in your card does not hold it.

carnival venezia. I believe some dining is included but not the specialty dining. were going in july
