Greece requires a negative test to board any ship headed there

According to the U.S. State Department website, which links to the CDC travel site, none of the ports, including Greece, require testing any more. As of right now, Norwegian is not requiring it either. Also, According to the State Dept/CDC site American Citizens do not have to have a negative test to board an airplane back to the U.S. Vaccination is not required for Norwegian cruises either, unless there is a country on the cruise itinerary that requires it.

Also, just so you know, the Jade is departing Piraeus harbor on Tuesday, March 21, not the usual Sunday departure. We have 5 in our party going on that same cruise!
