how much in advance do you recommend booking a tour? I was planning doing it once on the ship.

Definitely book as soon as you find something you want to do. They do sell out. If you are booking through the cruise line they normally do allow you to cancel and change them if you end up finding something else you want to do.

I booked through the ship’s app, but there was a few excursions already sold out

If you know you want to take a specific tour with the cruise, book as far as in advance as your financially can. More and more tours are selling out before you even board the ship. So waiting until onboard you may find the tour you wanted is no longer available. As an example, my brother waited to book a tour he wanted and when he finally decided to book it, it’s now sold out. 3 months before the cruise is due to take place.
