yes you can book those things separately from the water park but the hot air balloon RARELY goes up, always due to weather. You would obviously get your money back, but you reserve it for a specific time.

so you can purchase them separately in time slots also be aware that they do get canceled so for the the air balloon its based on the weather if it get canceled it then becomes on board credit but yes you can it is just a regular excursion booking no worries

It appears you can since it’s purchased separately. I thought it was a timed ticket but I could be wrong. It does sell out.
