New Fine Dining Eatery Solis Coming to Seabourn Ships

Luxury cruise operator Seabourn has announced a new fine dining concept coming to four of its vessels. The new eatery, named Solis, will serve Mediterranean cuisine inspired by the destinations visited by the cruise line. 

The new restaurant will launch on Seabourn Quest come January 2024, and will be rolled out across Seabourn Encore, Seabourn Ovation, and Seabourn Sojourn by the Spring. With the addition of Solis, Seabourn will mark the end of its culinary partnership with Chef Thomas Keller. 

Solis will be meticulously designed to bring the elegance and sophistication that guests are accustomed to with Seabourn. Each meal will be a true occasion, with a menu that will evoke all the senses. Highlights are to include whimsical cocktails, vibrant plating, and dishes with familiar and elevated flavor combinations. The restaurant space will be a new design that is according to the line, ‘reminiscent of the afterglow of the sun’. 

The new eatery is being developed in collaboration with longtime Seabourn partners, Master Chef and Culinary Partner Chef Anton Egger, and Senior Corporate Chef Franck Salein. The three’s year’s of Michelin-level dining experience, combined with a passion for travel and knowledge of Seabourn’s guests, will ensure Solis is a world-class dining experience that can rival the finest restaurants anywhere on land.

The menu at Solis will highlight Mediterranean flavors with dishes inspired by all areas of the region, from the Rivieras to Greece. 

A sample of featured menu items includes the Piquillos De La Mama, Basque piquillo peppers with fresh Murcia goat milk cheese served on country bread crostini; Branzino - A whole sea bass baked in sea salt and fresh thyme crust served with artichokes and tomatoes; Bistecca Alla Fiorentina – Tuscan-style grilled beef porterhouse steak; and Spiced Lamb Shank - Chargrilled smoked eggplant with tahini, pomegranate, roasted pine nuts, and labneh. The menu will also serve several vegetarian and vegan dishes. 

Solis will also serve an all-new refined vintage-inspired cocktail menu, featuring a range of classic drinks crafted to perfection. Highlights will include the Kir Royale, Negroni, and guest favorite drink the Aperol Spritz. Expert mixologists at Solis will ensure each drink is a masterpiece of flavors and aesthetics.
