Recipe: Oceania’s Pomelo Banh Trang Rolls and Carnival’s The Perfect Storm

Who is ready to roll? National Egg Roll Day is on June 10 and with summer around the corner what better way to celebrate than by making Oceania’s Pomelo Banh Trang Rolls. Similar to sushi, these fresh Vietnamese spring rolls are a non-fried treat and while they are fun and easy to assemble, they are even better to eat. Pro-tip, keep your hands slightly damp to keep the rice paper from sticking to your fingers. The only thing you want your fingers sticking to is Carnival’s The Perfect Storm. This invigorating twist on the classic dark and stormy cocktail features strawberry puree, a hint of rosemary, and a fresh lime. It’s sure to get you in the mood for summer and is the perfect way to celebrate National Dark and Stormy Day on June 9. If only we could keep all the storms this summer contained to a glass!

Pomelo Banh Trang Rolls - Oceania

INGREDIENTS

Miang Dipping Sauce 

  • 1 cup palm sugar
  • ½ cup water
  • 1 Thai chili
  • ¼ cup coconut flakes, toasted
  • ¼ cup crushed macadamia nuts
  • 1 tablespoon fresh lime juice
  • 2 teaspoons ginger juice

Pomelo Rolls

  • Segments of 4 pomelos
  • ¼ cup coconut flakes, toasted
  • ¼ cup salted dry-roasted peanuts, finely crushed
  • 2 tablespoons finely minced shallot
  • 8 Thai basil leaves, chiffonade
  • 8 mint leaves, chiffonade
  • 8 rice paper rounds
  • 8 butter lettuce leaves
  • 8 chive stems

INSTRUCTIONS

Make The Sauce

  1. In a small saucepan over medium heat, combine the sugar, water and chili and warm, stirring occasionally, until the sugar dissolves.
  2. Remove from the heat and stir in the remaining ingredients.
  3. Let cool and divide among 4 small bowls.

Prepare The Rolls

  1. In a medium bowl, combine the pomelo segments, coconut, peanuts, shallot, basil and mint.
  2. Soak a rice paper in lukewarm water until soft and then lay out on a damp kitchen towel.
  3. Top with a lettuce leaf and one-eighth of the pomelo mixture.
  4. Roll up the rice paper like a burrito or gather up the edges to form a pouch.
  5. Tie with a chive stem.
  6. Repeat to make 8 rolls and serve with the dipping sauce.

The Perfect Storm – Carnival Cruise Line

INGREDIENTS

  • 1 oz Bacardi Rum
  • 1 oz Bacardi Spiced Rum
  • ¾ oz Strawberry Syrup
  • 1 oz Cranberry Juice
  • ¾ oz Lime Juice

Instructions

  1. Combine all ingredients in a cocktail shaker with ice.
  2. Shake and strain into a stemless martini glass.
