Recipe: Oceania Cruises’ Sweet Cheese Crostini & Disney Cruise Line’s Ring of Bubbles

Farewell 2020, the New Year can’t get here soon enough! If you are looking to host a safe, socially-distanced party, you’ll want to serve easy-to-eat hors d'oeuvre and champagne. Legendary chef Jacques Pépin elevates the Sweet Cheese Crostini for Oceania Cruises by blending sweet and savory flavors. As an added bonus, this easy-to-make recipe will make you look like a culinary genius when you make a spread of different crostinis by mixing and matching your favorite cheese, meats, and sweet components. Bubbly is a must at any celebration and Disney Cruise Line’s Ring of Bubbles cocktail adds a little pizzazz and festivity to your champagne toast.

Sweet Cheese Crostini – Oceania Cruises

Ingredients

  • 1/2 pound assorted cheeses (such as feta, blue, Gouda, Gruyère, or Camembert), room temperature
  •  1/3 cup pumpkin seeds (maybe some chopped nuts like walnuts, pecans, or piñon)
  • 1/3 cup dark raisins (soaked in port, if desired) (I think rum would be good too!)
  • 1/3 cup honey
  • 2 tbsp freshly squeezed lime juice
  • Freshly ground black pepper
  • Kosher or sea salt (optional)
  • 1 baguette, thinly sliced and toasted

Directions 

  • Cut or crumble the cheeses into pieces about 1/4 to 1/2 inch in size. Place in a medium bowl.
  •  In a small skillet over medium heat, toast the pumpkin seeds for 3 to 4 minutes, stirring constantly and watching to ensure they do not burn.
  • Add the pumpkin seeds, raisins, honey, and lime juice to the cheeses. Stir to combine. Season to taste with pepper and salt, keeping in mind that salty cheeses may not need any additional salt.
  • Serve on top of toasted baguette slices with cranberry sauce or your favorite preserves.

Ring of Bubbles – Disney Cruise Line

Ingredients

  • 4 oz Moet & Chandon Imperial
  • 0.5 oz Grey Goose
  • 0.5 oz Patron Citronge Orange Liqueur
  • Blue Curacao
  • Fresh Lime Juice
  • 1 oz Pama Pomegranate Liqueur
  • Orange Passion Juice
  • 4 oz Moet & Chandon Imperial
  • 0.5 oz Grey Goose
  • 0.5 oz Patron Citronge Orange Liqueur
  • Blue Curacao
  • Fresh Lime Juice
  • 1 oz Pama Pomegranate Liqueur
  • Orange Passion Juice

Directions

  • Get two champagne flutes and pour Moet & Chandon Imperial into both.
  • Add Grey Goose, Patron Citronge Orange Liqueur and a small amount of Blue Curacao and lime juice into one of the flutes.
  • Add Mama Pomegranate Liqueur and a dash of orange passion juice to the other flute.
  • Serve as a pair!
