Set time you go the same time & sit at the same table each night w/ same service staff. The open seating you use the app to "call ahead" that night for a table they give you a time to arrive, you go to eat then. Unless willing to wait extra most likely you will have different servers each time. Menu is identical regardless of which option picked.

The only difference on the cruise line's end is the time your table is available. Passenger wise you will see a difference in the demographics at each seating, with families w/kids mostly gravitating to the earlier 1. The show schedule is organized around the 2 set dining times that all will have a chance to see the main production (also fone 2x/night).
