My experience is that they ask your preference for my time dining and try to honor it. Passengers willing to meet new friends usually get seated quicker as they fill up the larger tables. Those wanting a table of two may experience delays as there is set number of two person tables. If dining for two is your priority, you might want to try a set dining time in the main dining room. Upon embarkation go to the dining room and check with the host for your seating placement. If not satisfied, ask for a change. I have always found the host eager to meet requests especially hours before dinner time when the dining room is unoccupied.
