most cruises assing a slot time for dinner like 5pm or 7 or 8pm dining spot time may vary by cruise line, other like msc depend the experience you book is the privilege time you have or they assing you a time.. but you can make a request upon availability

You have assigned seats every night. You will sit at the same seat every night.

If you booked Bella or Fantastica,  you will have an assigned Dinner time. You can request a change if that time doesn't work for you.  If you booked Aurea ir Yacht Club,  anytime dining in the corresponding restaurant.
