If you are scheduled for a 11:00 am arrival do you get to load on the ship at that time.?

Get there at your scheduled time. You will board approximate soon after that & once you are checked in.

Good advice, as we are on vacation we should just chill.

It’s an approximation. On boarding day my suggestion is to pack a little extra patience. Everyone is excited to get on the ship and at times manners fly out the door.

Generally, boarding will start 11-ish. The 11 AM arrival appointment is when you can check in. After that, they board by "zones" with wedding parties, high loyalty levels and suites, and then the steerage. Some cruise lines then divide zones by the order you arrive, others by decks (Princess). Generally, they have cleared the zones by 12:30 and you just board after your check-in.
As far as I know, Carnival is the only line that enforces the check-in time. The other lines it is only a suggestion, but your mileage may vary.
