Explora Journeys Announces New Signature Italian Fine-Dining Concept

Explora Journeys has announced the launch of its new Italian concept signature fine-dining experience. The restaurant, named Anthology, is set to offer guests an unparalleled gastronomic adventure through the diverse and rich landscapes of Italian cuisine.

Anthology has been curated by Franck Garanger. The eatery showcases refined Italian cuisine, taking guests on a unique culinary journey. Franck is a former apprentice at Michelin Star restaurant, Le Vert D' Eau in Angers, and has worked at numerous world-renowned restaurants alongside some of the most notable culinary names including Paul Bocuse, Alain Passard and Thierry Marx. 

“Anthology is more than just a restaurant; it's a voyage through Italy’s gastronomic landscape. For me, Italian cuisine is about respecting the people, the ingredients, and the traditions that have been passed down through generations. It's about sharing the soul of Italy, one dish at a time. This will be a culinary reflection of the rich tapestry of the sights, scents and flavors of Italian cuisine, which I am deeply passionate about,” said Franck Garanger, Head of Culinary for Explora Journeys. 

Each dish on the menu is a celebration of fine Italian ingredients and flavors, crafted to highlight the cultural brilliance and culinary heritage of the Mediterranean. Highlights include Mediterranean seabass with Arabica coffee and tonka bean and scallop cannelloni with black truffles. Plant-based options are available for each course. Each plate celebrates the local produce and time-honored techniques of every region in Italy.

Anthology is set in a contemporary, refined elegant dining atmosphere that features an outdoor dining area so guests can enjoy their meal outdoors overlooking the ocean. The dining experience is complemented by impeccable service, making it a one-of-a-kind experience. 

Guests will be able to dine at Anthology on all Explora Journey’s ships. The brand currently has one luxury vessel in service, EXPLORA I. EXPLORA II is currently under construction and will come into service in September 2024. Following, EXPLORA III will come into service in 2026,  EXPLORA IV in 2026, and EXPLORA V and EXPLORA VI will enter service in 2027 and 2028, respectively.
