Carnival to Roll Out New Dinner Menus in Dining Rooms

Carnival Cruise Line has announced it will roll out new dinner menus in dining rooms across all the ships in its fleet. These changes come following a successful pilot program recently done on Carnival Dream

Dinner menu changes will be done in a phased approach across all the ships. Carnival Conquest will begin to serve the new menus starting today. Later this month Carnival Horizon will introduce the new offerings, and come August Carnival Sunrise, Carnival Vista, Carnival Radiance, and Mardi Gras will begin serving the new items. By early 2024, all ships in the Carnival fleet will serve the new dinner menus in dining rooms. 

Menus will offer a range of new options as well as Carnival staple dishes, along with new items curated by Chief Culinary Officer Emeril Lagasse in conjunction with Carnival Cruise Line chefs. Menus will include the addition of ‘Emeril Selects’ items, dishes created and personally recommended by Lagasse. 

“Food is an ever-evolving art, so our approach to the dining room offerings is to infuse a selection of new dishes, feature more international flavors and complement the Carnival classics our guests love,” said Lagasse. “Working with our skilled team of Carnival chefs, we recently tested and selected more than 60 new dishes to mix into the dining room rotation. I’m pleased that these dishes were very well received by our guests on Carnival Dream, so we are very excited to roll them out to the Carnival fleet.”

Following is a look at some of the additions coming to Carnival Cruise Line’s dinner menus. 

New Dish Additions

Below is a sample of the new dishes coming to Carnival Cruise Line dinner menus: 

  • Hawaiian Shrimp Poke – This starter dish combines avocado, edamame, rice, spicy sauce, togarashi chili, and wakame.
  • Roasted Duck Rolls – A new appetizer, combining duck, rice paper, and scallions and served with sweet garlic sauce.
  • Pappardelle with Braised Lamb – This Italian-inspired first-course dish will feature tomato cream sauce, garlic, and parsley.
  • Grilled Swordfish – A new seafood entree item served with smashed fingerling potatoes, fava beans, and cherry tomato salad in a citrus saffron sauce.
  • Cornish Game Hen – This new main entree item is served with roasted root vegetables and pan gravy.
  • Salad Entrees – New main salad menu additions to include the Ultimate Cobb Salad, Asian Chopped Salad with Chicken, and the Beefsteak Salad.
  • Desserts – Dessert lovers rejoice! New menu items will include the Dutch Double Chocolate Pave, a rich chocolate cake, and a new Banana Cream Pie.

‘Emeril Selects’ Menu Items

New menu items curated and developed by Chief Culinary Officer Emeril Lagasse:  

  • Crab and Shrimp Cake – A seafood appetizer served over charred corn and apple slaw with remoulade sauce.
  • Beef Carpaccio – This appetizer item is topped with mascarpone-truffle cream.
  • Coffee Glazed Roast Duck – A main entree item served with Creole potato wedges.
  • BBQ Salmon – This main dish is topped with a house-made Worcestershire sauce, topped with fried onion rings, and served with Andouille potato hash,

Carnival Classics

Following are some of the Carnival classic dishes that will continue to be served on dinner menus: 

  • Escargots Bourguignonne – The popular appetizer features shallots, garlic and parsley Pernod butter.
  • Stuffed Mushrooms – An appetizer topped with spinach, Romano cheese and truffle herb velouté. 
  • 12-Hour Braised Short Ribs – This entree item is served with green beans, chive mashed potato and a truffle au jus.
  • Classic Beef Wellington – A classic menu item of delicious beef fillet wrapped in puff pastry and served with sweet and sour Brussels mushroom Madeira sauce.
  • Chocolate Melting Cake – This rich and warm chocolate dessert is one of Carnival’s most popular dishes of all time. Served with a tasty scoop of ice cream.
  • Bitter & Blanc – A guest-favorite bread pudding dessert topped with cinnamon dulce sauce.

In addition, dining room menus will include a periodic rotation of offerings from Carnival’s specialty restaurants.
