Food allergies are handled very well on Viking. When you book the cruise you let them know what allergies you have and that information goes into their system, so immediately upon going to dinner your waitstaff knows your restrictions. There is a dedicated staff member whose job is taking care of those with food allergies, and they come around each night to see if you have any questions or need anything. You also are given the next night's menu to make your selections/changes ahead of time.
