Ritz-Carton Yacht Collection Announces Culinary Offerings for Ilma

Ritz-Carlton Yacht Collection has announced the culinary offerings coming to Ilma, the luxury operator’s second super yacht. Ilma is slated to set sail on its maiden voyage from Monte Carlo to Rome on September 2, 2024. 

 

Guests will be able to choose from Ilma’s five dining venues, a refreshed in-suite dining program, seven bars, and a signature wine vault. With a distinctive mix of intimate specialty restaurants and casual poolside eateries, the dining and beverage offerings aboard Ilma will provide a variety of options to satisfy every palate. 

Restaurant highlights onboard Ilma include Seta su Ilma by Chef Fabio Trabocchi, the Beach House, Memorī, Mistral, and Tides. A well-rounded beverage program will enhance all dining experiences.

Drawing inspiration from Fabio Trabocchi’s Italian heritage and expertise in Italian cuisine, Seta su Ilma (Italian for “silk”) is among the ship’s premier dining destination. Seasonal tasting menus will feature a contemporary interpretation of Italian cuisine, nodding to regional flavors. Dishes will range from fresh seafood to homemade pasta, all impeccably paired with fine wines from a deep cellar of Italian whites and reds. Seta su Ilma will welcome diners each evening with a seven-course tasting menu, and a five-course tasting menu lunch on select afternoons. This specialty dining experience is exclusively available to guests for an additional fee, with an optional wine pairing available.

The exquisite Italian coastal cuisine will be our inspiration for a journey of elegance and timeless beauty as part of La Dolce Vita,” said Fabio Trabocchi, MICHELIN star chef and founder and owner of the celebrated Fabio Trabocchi Restaurants.

At the Beach House, bright and airy interiors will flow into the ship’s expansive outdoor pool deck. This beach club-inspired venue will meld globally influenced flavors in a relaxed yet upscale atmosphere. The menu is being developed in collaboration with James Beard Award-winning chef Michael Mina. Dishes will feature flavors of South and Central America and the Caribbean. The Beach House will serve lunch and dinner, as well as signature brunch events. 

MemorÄ« will serve authentic Pan-Asian cuisine in a sleek environment, anchored by an open twelve-seat sushi bar. Open for lunch and dinner, guests can enjoy Japanese bar snacks, sashimi, tempura, dumplings, Wagyu, and more in the restaurant’s indoor and outdoor seating. A selection of sake, Champagne, Japanese whiskeys, and plum wines will accompany the dishes.

Mistral (located just off the main pool deck) will celebrate timeless Mediterranean fare with traditional breakfast dishes in the morning, pasta and pizzas, crisp salads, and fresh seafood, grilled steaks, and chops throughout the day. Mistral is a great spot for a casual lunch, romantic dinner, or cocktail overlooking the water. Its location offers some of the best views on the yacht.

Tides will offer seasonal menus inspired by the diverse regional flavors and techniques of the destinations that Ilma explores, evolving throughout the voyage. For Ilma’s inaugural season in the Mediterranean, the menu will capture elements of Greek, Italian, and Spanish regional cuisines. As Ilma makes its crossing to the Caribbean, the menu will transform to feature elements of the Florida Keys, Bahamas, Puerto Rico, and the Southern Caribbean islands. 

Nestled behind Tides and Seta su Ilma, Dining Privée will provide an intimate and elegant enclave for celebratory dinners and other special events, available at an additional fee.

At the heart of Ilma will sit The Living Room, serving freshly roasted coffee and baked pastries at the espresso in the morning. As the day progresses, The Living Room Bar will pour specialty cocktails and wines, accompanied by a live pianist.

Guests can also opt for In-Suite Dining for breakfast, lunch and dinner. The menu serves a variety of classics from the different onboard restaurants.

Ilma will make its debut in the Mediterranean this fall. The ship, measuring 790 feet, features 224 spacious suites accommodating up to 448 guests. The yacht’s interior is being designed by renowned London-based architectural and design firm AD Associates, award-winning lighting designer DPA, and Chapi Chapo Design. Its sleek exterior has been designed by Helsinki-based design studio Aivan. All guests on Ilma will enjoy world-class amenities and legendary service for which The Ritz-Carlton brand is recognized, and one of the highest staff-to-guest ratios in 

luxury cruising.
