Recipe: Royal Caribbean’s Crunchy Oat Bran Muffins and Viking Cruises’ Cafe Maria Theresa
We’re giving you advanced notice so you can enjoy this delightful breakfast on National Oatmeal Muffin Day, December 19. Royal Caribbean guest Irene Feldman from Coconut Creek, Fla., loved this muffin so much when she tried it on the Harmony of the Seas that she asked her local newspaper to find the recipe for her and they delivered. We’re pairing this muffin with Viking Cruises’ Café Maria Theresa. Who doesn’t enjoy a bougie coffee with a muffin? After all, this flavorful coffee is popular throughout Austria and named for beloved Austrian empress Maria Theresa. Who says a Royal and Viking can't get along?
Crunchy Oat Bran Muffins – Royal Caribbean
Ingredients
- 5 cups low fat oat bran muffin mix, packed, not sifted
- 3/4 cup Ezekiel 4:9 Sprouted Grain Original Cereal or Grape Nuts Cereal
- 3 large eggs
- 2 1/2 cups water
- Pan release spray
Instructions
- Combine liqueur and sugar in a pre-heated serving cup; stir until sugar dissolves and add coffee.
- Preheat the oven to 400 degrees Fahrenheit.
- Using an electric mixer fitted with a paddle attachment on low speed, mix all ingredients until combined, occasionally scraping the sides and bottom of bowl with a rubber spatula.
- Spray muffin pans with pan release.
- Fill with 1/4 cup batter.
- Bake 22 minutes.
- Place on a wire rack until cool enough to handle. Run a paring knife around each muffin. Invert pan to remove muffins and cool slightly.

Café Maria Theresa – Viking River Cruises
Ingredients
- 1 tsp (4 g) sugar
- 2 T (30 ml) orange liqueur (Grand Marnier or Cointreau)
- 6 oz (177 ml) freshly brewed coffee
- 1 T (7 g) whipped cream
Garnish
- ½ tsp (1.5 g) orange zest
- 1 tsp (2 g) chocolate shavings
Instructions
- Combine liqueur and sugar in a pre-heated serving cup; stir until sugar dissolves and add coffee.
- Top with whipped cream and add garnish.
- Prep time: 5 minutes. Makes 1 serving.
