We enjoyed the "free style" cruising on the Norwegian Sun.  Although we did utilize the ship's sit-down restaurants and one speciality restaurant, the non-scheduled, open style buffet dining was extremely kid friendly.  Three in a cabin with one king (or was it queen?) bed and a divan that was opened at night for the third bed was tight, but it worked.  My boys (aged 9 and 10) weren't too enthralled with the kid program and after the first day, didn't go back. They did enjoy some of the other entertainment provided in the ship's theater - a comedian, juggler and the acts put on by the ship's production company.  The excursions available at the ports of call were adequate and for the most part offered a diversity for those seeking something other than beaches.  The bottom line for the entire trip is that my boys said they would like to cruise again.

We did the zip line and eco tour. It was well staffed, safe (as it can be), and fun.

We did the cave tubing. It was okay, but wasn't as adventurous as we thought it would be.

We did the Mayan Experience which included lunch at a Mayan home. The guide at the ruins was great. The lunch was good, but I thought it would have been a bit more "homey" than it was.
