Overall, this was a very good experience and one that we believe most people will enjoy.
(Keep in mind that weekend itineraries are more prone to having lots of young people and kids.)
Aside from some dissappointment on the activities, some average food and a small issue with tipping (we prepaid it and since we didn't use the restaurant we basically tipped people whose services we never used and once you prepay you can't make any changes to the allocations) it was a very pleasant experience.
Food and Dining

We only used the Windjammer buffet, Johnny Rockets restaurant (that was not a typo) and Sorrento's Pizza.
Johnny Rocket and Sorrento's are pretty good and deserve a higher ranking than average. Please note that you pay a flat fee + drinks at Johnny Rockets.
The food at the WindJammer is ok but we found very few things there that we actually loved. Most of it was not bad and maybe if I had not been in other cruises before I would rate it higher. As it is, I think average sums it up pretty well.
Also note that we didn't go to the regular sit-down restaurant because we were assigned a 6pm dining slot which we could not change because the ship was full.

Schedule is very convenient since you return so early that you can probably work that day (if you live in the area).
The shore excursions were a bit disappointing but not bad by any means.
We did the kayak ride in Coco Cay which is basically a long ride to a near place; in fact we had visited the "secluded beach" they refer to by simply walking the nature trail not 20 minutes before we went on the kayak.
We also did the Atlantis tour and there is no sugarcoating this... It's not worth $50+ per person. Just take a $4/person taxi to the hotel and go look at it yourself. I don't know how much you would have to pay for the aquarium (which you MUST see) but the rest of the hotel just didn't do it for us.
The rock climbing wall on the ship is great and something you should definitely check out. Beyond that the nighly entertainment was ok with the comedian being above average and the rest of the offerings being uninteresting to us.
Service and Staff

Please note that in this case, waiters are not mentioned since we didn't use their services.
Our stateroom attendant was simply excellent. He was always around and was able to answer every single question we threw at him. Some of the other staff we dealt with like the activities coordinators were pretty good to excellent as well. Front desk staff was helpful.

The ship is definitely beautiful and is tastefully decorated.
For the most part all public areas were kept clean and most places you would want to go to are fairly easy to find. There are also plenty of public restrooms all over the ship.
Elevators and stairs are plentiful, but catching an elevator where you can squeeze yourself into can often be challenging.
Cabin / Stateroom

We had an SO room with an obstructed view. All things considered it was relatively roomy (155sq ft) and the bed was comfortable. No extra padding needed.
There were also plenty of hangers, drawers and shelves for us to store everything we had and then some. The TV is a nice if small flat panel and movie selection was pretty good.
The view wasn't that obstructed and we actually could see outside pretty well.
Rooms include a blowdryer and side-lit mirrors. With all lights on, you'd think you were outside! Overall a great room for the price.
