To book the villas, login to your booking, go to Shore Excursions and use filter for HMC excursions. There you can purchase the villa. Once onboard the ship, go ASAP to the Excursion Desk to pick out which villa you are interested in.

You actually need to log on asap when you have decided you want to do one, and book it via the cruise ship app. These sell out quick so DO NOT wait until you get on the ship like someone suggested. Good luck and I have done 2-3 of these , so speaking from personal experience.
