Is it necessary to sign up ahead of time to eat dinner at the same night and same table with the same people every night?

That depends entirely on the cruise lines and ships. For example NCL does not do that type of dining at all while most of the others will offer the scheduled seating as you ask about or allow for flexible dining. Check with the cruise lines for the protocol for the ship you are looking at or if you have a specific ship in mind I am certain that the community here could answer that.

I'd check with the cruise line, but based on my last two cruises, Carnival and Celebrity don't seem to require you to reserve a specific time for dinner. The only downside is they may not have room for you in the dining room if you chose Anytime Dining, so there may be a bit of a wait.

Short answer is no on NCL...but if you WANT to eat with the same people...show up together.

Carnival does not do this, but if you dont like your table mates,they will move you to another table. We always ask for a table for 2. If there is a problem they cannot resolve(out of table for 2)we eat on lido deck. We check menu for what is to eat, and if we don't like the fare, we eat at the steakhouse, so lots of choices.

NCL does not have reserved dining except in the up charge dining venues
