We are sailing alone and subsequently interested in adults only beaches, resorts, etc. Want to minimize interaction with kids as this is our adult only trip of the year. Any suggestion are greatly appreciated! GO!

Only advice I can offer is to pack LOTS of suntan lotion with a high SPF
There are some places that you really don't want to get sunburned.
I don't know of any resort or beaches that are geared towards adults only that you can visit, but searching through Google might help.
My suggestion would be an all inclusive day pass. In Cozumel there's Secrets Aura. Have a great cruise!!
Perhaps Jamaica has a nude heathen area and there is a nude beach on St Marten

Nochi Cocum in Cozumel is popular for adults and has a maximum daily enterance of 100 people, so it makes it not crowded. You have to go online to make reservation with a minimum deposit. then you hail a taxi to go there and there will be taxis at their gate when cruise passengers are ready to go back to ship.
I too suggest Nachi Cocom while in Cozumel. You can check their web site along with TripAdvisor for more information and reviews. Enjoy that cruise!
For Cozumel, we like to go to Papito's Beach Club in the Punta Sur National Park. It is farther out than most of the other beach clubs and resorts, but it is worth the extra drive. It has never been crowded when we have been there- I think they limit admittance to 50 people, but I've never seen more than around 25 people there. They have an all-inclusive package for $50 which includes all food and drinks, use of lounge chairs and umbrellas, hammocks, kayaks, paddle boards, and snorkeling.
