We went swimming with the dolphins at one of the national parks five minutes from port. It was an awesome experience with hands on. Totally worth the money. Remember to bring a waterproof camera or buy a disposable from the gift shop for 22 bucks. If not they charge you 100.00 for pics-almost as much as the tickets. We also went snorkeling off the beach in the same park. It was amazing-tropical fish swimming all around you. There are rental shops all around the beach for snorkels and fins. Go to the shops further from the main area and they are cheaper. We only payed 10.00 each for snorkel gear. The con of this is that we had intermittent rain showers and it was pouring around 6 so we didn't get shopping in.
Key west...You don't get too much time there. We got off, walked to the beach....It was one of the only beaches and it was SMALL, and the water wasn't that great with lots of weeds. We didn't have time to shop or go to any excursions. I say Skip Key West, and do two days in Cozumel!
